Frango da Guia: the Algarve's famous chicken
A few minutes from Quinta da Balaia is Guia, the grilled chicken capital of the Algarve. If you only try one local dish on holiday, make it this one.

Guia is a small village in the municipality of Albufeira that has become famous for one simple dish: chicken grilled over charcoal. At weekends the restaurants fill up with local families, and you can smell the charcoal as soon as you arrive.
What is frango da Guia?
Frango da Guia is a small, young chicken, split open and flattened, then slowly grilled over charcoal. The secret is the size of the bird, which must be small so the meat stays juicy, and the time on the grill: the skin turns crisp and golden while the meat stays tender.
Once grilled, the chicken is brushed with a sauce whose recipe every restaurant keeps secret. It usually includes garlic, lemon, oregano, olive oil and a splash of spirits. Piri-piri is optional: ask for it "com picante" if you like it hot, or "sem picante" for the children.
The tradition began in Guia in the 1960s and spread across the region. Today there are chicken restaurants on almost every street in the village.
How to eat it
Frango da Guia is simple food, best eaten with your hands:
- Homemade chips, cut by hand
- Tomato and onion salad, dressed with olive oil, vinegar, salt and oregano
- A glass of chilled white or rosé wine, or a cold beer
Order half a chicken per person or a whole one to share. Most restaurants also do takeaway, which is perfect for a relaxed dinner on the villa terrace.

- O Vieira (Guia): a village classic, with beautifully grilled chicken and a relaxed atmosphere.
